1.5 oz Chopin Potato Vodka
1 oz cucumber juice, plus extra to serve
1 oz simple syrup
3 sprigs of mint
.75 oz lemon juice
A slice of cucumber and juice to finish

First, make cucumber-mint syrup by mixing cucumber juice, simple syrup and 2 sprigs of mint. Leave to macerate for 24 hours, then remove the mint. Combine Chopin Potato Vodka, lemon juice and .75 ounce cucumber-mint syrup in a shaker, then strain over ice into a Collins glass. Top up with cucumber juice and garnish with remaining mint and cucumber slices.
